Spring soup recipe


Lovely Spring herb and yoghurt soup (by Anna Jones’ – Guardian)

Just about the perfect bowlful for this space between winter and spring. You can use any soft herbs here – just make sure you balance a more neutral herb, such as parsley, with a stronger one such as tarragon (the stronger the flavour the less of that herb you will need). You need quite a gentle stock for this: if you are using cubes or powder then ½ a cube or 1 tsp of powder will be plenty in 1 litre of water.

Two Immune enhancing Soup Recipes for late Autumn/Early Winter

Chicken version:

1 Onion

1-2 cloves of garlic

1 -3 teaspoons of grated ginger (according to taste)

1-2 leeks if liked – cleaned and chopped finely.

Olive oil

Small amount of chopped chilli according to taste – or a pinch of Cayenne pepper

Handful of cooked chicken (preferably free range or organic)

Approx 500mls  chicken stock or hot water and organic chicken stock cube – (good quality stock makes the best soup  – by putting bones from previously  roast chicken in a slow cooker for a few hours with liquid to cover bones plus an onion and pinch of dried herbs).

How to make an Elderberry Syrup


Elderberries have anti-viral qualities – which in many cases can help to shorten the length of colds and flu.* 

Approx 500 grms of fresh elderberries cleaned from their stalks – or 250 grms of dried Elderberries (available mail order from Baldwins**)

Water just to cover dried berries – less if using fresh berries (enough so that the berries won’t catch and burn as the berries will liberate a lot of juice).
